Is popcorn good for diabetics type 2?

My father has Type 2 diabetes, and we are always looking for snack ideas for him. He likes munching on something light in the evenings. Is plain popcorn a good choice for someone with type 2 diabetes?

Even though plain popcorn is high in fiber, any carbohydrate can affect your blood sugar if your insulin levels are fluctuating. It is always safer to test your blood sugar two hours after eating it. Get your HbA1c checked regularly and consult your doctor before making it a daily habit.

If you need a quick, healthy office snack, plain popcorn is much better than sugary biscuits. It takes just three minutes to make a plain batch at home. Just avoid the processed microwave bags as they contain unhealthy trans fats.

Popcorn is a whole-grain vegetarian food, but carbs are still carbs. While the fiber helps slow down digestion, portion control is absolutely key. I recommend limiting it to one or two cups of plain air-popped corn and avoiding any buttery toppings.

I really want to try eating plain popcorn as an evening snack, but I am so scared of my blood sugar shooting up. Does anyone else with type 2 diabetes feel anxious about trying new grain snacks? Did popcorn suit you?

Honestly, after a long shift, I am too tired to prep a fancy diabetic snack, so I just pop some plain corn kernels in a pan. It's a high-fiber whole grain, so it doesn't spike my sugars and is super low effort.
