How to season kidney beans?

I'm trying to incorporate more kidney beans into my diet but finding them a bit bland. How can I season kidney beans to make them more flavorful for Indian cooking?

I used to get so much bloating and anxiety about eating rajma thinking it would ruin my digestion. But cooking it with lots of hing and ginger really calmed my stomach and my fears.

Honestly, nothing beats the classic North Indian style. Just make a nice masala of onions, tomatoes, ginger-garlic paste, and slow-cook the kidney beans until they are completely soft and buttery.

Since I have thyroid issues, I have to be careful about gut health. I season my kidney beans with cumin and coriander powder for easy digestion, and I always make sure to track my levels with regular blood tests.

I am just learning to cook and always mess up the spices for rajma. Do we have to add the salt while boiling or after making the tomato gravy?

A balanced way to season them is using fresh herbs like coriander, cumin, and a touch of amchur for acidity. If you have chronic kidney issues, do check with your doctor regarding potassium levels in beans.

For my kids, I make sure to soak the beans overnight and boil them with a bay leaf and cardamom. It naturally sweetens the gravy so I don't have to use heavy spices.

I recently had major stomach issues and had to cut down spices. I started seasoning boiled kidney beans with just black salt, roasted cumin powder, and lemon juice; it is incredibly light and tasty.
