How to make sourdough bread for diabetics?

My doctor recently told me I have pre-diabetes, and I'm trying to make healthier food choices, especially with bread. I heard sourdough bread might be better. Can anyone share how to make sourdough bread that's good for diabetics?

Sourdough is actually great for diabetics, haan. The fermentation process lowers the glycemic index. Just use whole wheat flour or ragi instead of maida, fir badiya banega aur sugar bhi spike nahi karega, na.

I totally understand the anxiety of wanting to eat bread but worrying about sugar spikes. Sourdough made with whole rye or spelt flour is much safer. Don't worry, you can still enjoy bread, just bake it with high-fiber grains.

Baking is a beautiful, mindful process that feeds the soul. For our diabetic brothers and sisters, long fermentation of sourdough helps break down gluten and sugars naturally. Stay positive, make it with love using whole grains, and take care of your health.

I am no medical expert, but my husband has type 2 diabetes and loves bread. I bake our sourdough using 70% whole wheat and 30% oat flour with a long 24-hour cold ferment. It has never caused a sudden spike in his readings.

Honestly, sourdough is a bit of a project, but it is so cool. My dad has diabetes, so we started making it with multi-grain flour at home. Just don't buy the store ones as they often mix commercial yeast and maida.

Just like keeping the mind calm, sourdough requires patience for natural fermentation. This slow breakdown makes it highly digestible and gentle on the pancreas. Use ancient grains like Emmer wheat (khapli wheat) for the best results.
