How to cook green beans for a diabetic?

My father was recently diagnosed with diabetes, so we're trying to adjust his diet. Green beans are good, I know, but how should I prepare them so they are healthy and suitable for him?

My grandmother always says to make a simple beans poriyal with a little grated coconut for health. However, for diabetes, my doctor advised keeping the coconut light and focusing more on boiling the beans with mustard seeds and curry leaves in minimal oil. It is very healthy and light.

I used to panic so much about every single gram of carb my diabetic mother ate, thinking everything would spike her sugar. But green beans are actually super safe and low glycemic. I just steam them and saute with a tiny bit of garlic and olive oil, and her sugar stays completely fine.

I cook for my dad who is diabetic. I just chop the green beans, throw them in a pan with a little oil, salt, turmeric, and black pepper, and stir-fry for 5 minutes. It keeps them crunchy and doesn't destroy the nutrients.

I have been managing my diabetes for 15 years now. The best way to cook green beans is to steam them until they are just tender, then toss them with some roasted sesame seeds and a pinch of black pepper. Avoid adding heavy gravies or cornstarch to keep it diabetic-friendly.

Green beans are basically water and fiber, so you don't need to overthink this! Just don't drown them in potatoes or deep fry them like pakoras. A simple steam with some garlic and lemon juice is more than enough to keep the sugar levels happy.
