It is very kind of you to think about this and care for living creatures. Yes, studies suggest they do feel discomfort and pain. It is always good to treat all living things with gentleness.
My elders always told me that every creature with a shell experiences distress when heated, so we should be careful. While we usually discuss human health and doctors here, showing empathy to nature is also a great part of well-being. If you are preparing them, please use humane methods.

Look boss, they definitely struggle and try to escape when put in hot water, so pain is obviously there. No need to overcomplicate it with heavy science words. Just treat the creature with some respect and freeze them first if you are planning to cook.
