My wife makes a lot of vegetable dishes, and carrots are a staple in our kitchen. Since I have diabetes, I always try to be mindful of what I eat. Are carrots considered safe for diabetics?

I was actually researching this recently because my dad loves carrots in winter. It turns out that while they are slightly sweet, carrots have a very low glycemic load and lots of fiber. So having them raw in salad is actually totally fine and healthy!
Unless you are planning to eat five kilos of gajar ka halwa loaded with ghee and sugar, you are absolutely fine! Normal raw carrots in your salad won't turn you into a sugar balloon. Enjoy your crunch, it is actually great for your eyes too.
Carrots are actually very healthy, yaar. They do have some natural sugars, but the fiber in them slows down the sugar absorption. Just don't drink carrot juice because that removes all the good fiber and can spike your levels. Stick to raw slices.
Haan na, carrots are very good for health. My mother-in-law has diabetes and she eats raw carrots daily in her lunch salad. Boiling them too much makes them sweeter, so eating them raw or lightly steamed is the best way, ho na.
Yes, diabetics can absolutely eat carrots. They are non-starchy vegetables with a very low glycemic index of around 16. Just keep them raw or lightly cooked, control your portions, and don't worry about it.
