Can diabetics have baked potatoes?

I really like baked potatoes, especially with some spices, but my doctor told me to watch my carbohydrate intake. I'm wondering if a simple baked potato is okay for a diabetic person. Can diabetics include them in their diet?

My son loves potatoes, but we have to be very careful because baked potatoes have a very high glycemic index. To prevent a major sugar spike, I bake them with the skin on and serve them cold or paired with lots of butter or sour cream to slow down digestion.

Baked potatoes are pure comfort food, but unfortunately, they act like rocket fuel for blood sugar! If you can't resist, just eat a very small portion and load it up with cheese, olive oil, or chicken to buffer the carbs.

Yes, but only in very limited quantities and ideally cooled down first to increase resistant starch.

If you are planning to eat a baked potato, make sure you go for a brisk 30-minute walk right after your meal. This helps your muscles absorb the glucose quickly and prevents a heavy post-meal sugar spike.

Baking actually increases the glycemic index of potatoes compared to boiling them. It's better to avoid them entirely or switch to baked sweet potatoes in moderation, which have a much better nutritional profile.

I totally get it, giving up potatoes is the hardest part of a diabetic diet because they are in almost every Indian dish. If you really miss them, try baking sweet potato wedges with some chat masala instead, it feels like a nice treat.
