Can diabetics eat potato salad?

We are planning a small get-together, and I wanted to make a potato salad. My husband has diabetes, and I want to make sure the food we prepare is safe for him. Can he eat potato salad, or should I make something else?

It can be tricky because potatoes raise sugar quickly, but you don't have to fully give it up. Maybe try making a version with less potato and more green veggies, and have a very small portion.

Making a complete potato salad at home is better than buying it. You can boil the potatoes, let them cool in the fridge overnight to create resistant starch, and mix in lots of cucumber, onions, and curd instead of mayo. This way it won't affect your sugar as much.

Potato salad is basically a wolf in sheep's clothing for diabetics! Just because it has 'salad' in the name doesn't make it safe. If you eat it, keep the portion size microscopic, or swap potatoes for boiled sweet potato or even cauliflower.

Please be very careful with potato salad, as my father had severe glucose spikes after eating it and we had to visit the clinic. You should consult your doctor or dietician before eating starch-heavy salads like this.

I get so worried reading about potatoes because they have such a high glycemic index, especially when mashed or boiled. If you really want potato salad, maybe mix in lots of boiled egg whites or chicken to balance the carbs, and check your sugar levels afterwards.
