Are raw carrots good for diabetics?
My doctor recently diagnosed me with diabetes, and I'm trying to adjust my diet. My wife keeps telling me to eat more vegetables, so I was wondering if raw carrots are a good option for diabetics.

Raw carrots are cheap and actually very healthy as a snack compared to buying expensive sugar-free biscuits. Just monitor your sugar with a basic glucometer after eating them to be safe. We must plan our budget well because regular lab tests also cost quite a bit nowadays.
Yes, they are fine in moderation because they have a low glycemic load. But if you have thyroid issues along with blood sugar, you need to be extra careful with your overall diet. Make sure you get your HbA1c and TSH tested every three months and discuss it with your doc.
I track all my meals on my app, and raw carrots barely add any carbs while giving amazing fiber. Eating them raw is actually better than boiled carrots because cooking increases their glycemic index. Just log your portion size so you stay within your daily carb limit.
I can only tell you what works for me as a diabetic. I eat half a raw carrot as a salad before my lunch, and my sugar readings usually stay quite stable. Everyone's body behaves differently though, so do check with your doctor first.
A warm welcome to the community. Yes, raw carrots are a wonderful, crunchy snack for diabetics as they have plenty of fiber. Just don't juice them, because juicing removes the fiber and can raise your sugar levels. Have them whole and raw in small portions.
