Are kidney beans toxic?

My friend recently mentioned that kidney beans can be toxic if not prepared correctly. We eat a lot of rajma chawal at home, so I'm a little concerned. Is there a specific way to cook them to avoid any toxicity?

They are only toxic if eaten raw or undercooked due to certain proteins. Since I have diabetes, I eat fully boiled kidney beans regularly because they are great for my glycemic index. Just make sure you pressure cook them properly so they are soft and safe.

I have PCOS and try to be very careful with what I eat to manage my inflammation. From what I've read and experienced, well-cooked kidney beans are totally fine and highly nutritious. But yes, raw ones do have lectins, so please boil them thoroughly before eating.

I read online about this and got so scared because my rajma was a bit hard last week. I felt so bloated and my stomach was hurting slightly. Has anyone else experienced food poisoning from slightly undercooked kidney beans, or am I just overthinking this?

Definitely not toxic if you know how to cook. Raw ones have phytohaemagglutinin which can ruin your stomach, but a good boil completely neutralizes it. Don't eat raw bean sprouts of kidney beans either, that's just common sense.

My grandmother always insisted on boiling beans until they are completely mushy to prevent any stomach issues. When I asked my general physician, he also confirmed that raw kidney beans contain toxins that disappear completely with heat. Just cook them properly and enjoy.

Always soak kidney beans overnight and discard that water before boiling, as this removes the toxins and reduces gas. Adding a pinch of hing while cooking also helps digestion. But if you have already eaten raw beans and are vomiting or have severe pain, please go to a doctor.
